Bourbon Chicken Recipe

I can’t be the only one that used to get this bourbon chicken from the food court every time I went to the mall growing up. This tasted exactly like I remember and I make this all the time. It’s sweet and savory with a little punch from that bourbon and it’s so easy to make.
Prep Time: 15 min | Cook Time: 20 min | Total Time: 35 min | Serving: 2-3
Ingredients:
1 lb chicken thighs
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
2 tbsp hoisin sauce (for seasoning)
2 tbsp butter
3-4 cloves garlic, minced
1-2 tsp fresh ginger, minced
¼ cup bourbon
¼ cup soy sauce
1.5 tbsp apple cider vinegar
¼ cup brown sugar
¼ cup hoisin sauce (for sauce)
½ cup water
1 tbsp cornstarch
Cooked rice, for serving
Instructions:
In a bowl, season the chicken thighs with salt, pepper, garlic powder, and 2 tablespoons of hoisin sauce. Ensure the chicken is evenly coated.
Heat a large pan over high heat and add oil.. Add the seasoned chicken thighs and cook until they develop a nice char from the hoisin sauce, approximately 7 minutes per side. Once cooked, remove the chicken from the pan and set it aside.
In the same pan, add the butter and let it melt. Add the minced garlic and ginger, cooking for a few minutes until fragrant.
Pour in the bourbon and let it cook down for a couple of minutes to allow the alcohol to evaporate.
Add the soy sauce and apple cider vinegar, stirring to combine.
Mix in the brown sugar, remaining ¼ cup of hoisin sauce, water, and cornstarch. Stir well to ensure the cornstarch is fully dissolved and the sauce thickens.
Chop the cooked chicken into small pieces and return them to the pan, coating them thoroughly in the sauce.
Serve the bourbon chicken over a bed of cooked rice.
